
2021 The Other Wine Co. Savagnin

Savagnin is a grape typically found in the Jura region of France (located between Burgundy and Switzerland), most famously used in vin jaune, which is made in a similar way to Sherry, under flor.
We set out to make our own take on the style, blending the complexity of flor with our trademark drinkability. Three strains of flor yeast, 18 months in oak, and here it is... savoury and mouth-watering and bottled in 375ml bottles, making it the perfect aperitif.

Has lots of baby Vin Jaune characters going on. Scents of fino/manzanilla, butter toast, lemon balm, ripe apple. Good whiffs. Big flavours too, very rich in the palate, super slick and creamy, honey nut Cornflakes on green apple juice. Refreshing finish. A bit over the top, but interesting.

Always with a mindset to think outside the box The Other Wine Co has once again hit it out of the ballpark and into the nether regions. What a way for Matt Large to take centre stage this vintage with the first release of Savagnin and in a 375ml bottle to boot. Cuteness personified. However, instantly try the wine and you'll be saddened it's not a larger format. Grown in the Southern Fleurieu to which benefits from cooling sea breezes the wine was fermented in neutral oak to which three separate yeast strains were introduced and aged under flor for 18 months. There is an equilibrium of mustard fruits, preserved lemon rind, glace pineapple held in tension with and roasted almond, white miso and curry leaf. It teeters between sunshine on peach cheeks and savoury toasted nuances. Evenly balanced between ripe, refreshing fruit and the detailed elements of umami. It's a wondrous wine to drink and to ponder. The mind reels at the possibility of pouring alongside various cuisines. I’d go for Flounder swimming in a pool of Hollandaise.
